How Can I Make Vegetarian Sausage Rolls Without Sausages?

Hey everyone,

I was hoping to make some vegetarian sausage rolls for my dad when he visits tomorrow night. Usually, I just mash up some veggie sausages and mix them with caramelized onions, then wrap it all in pastry. But I just realized I don’t have any sausages like I thought.

I do have a couple of soya, red pepper & beetroot burgers. Do you think those could work instead? Any tips or ideas for what I could do with the ingredients I already have? I’m a bit limited on what I have at home, and I really don’t want to take my 1-year-old into town on Christmas Eve.

Bonus points if anyone has suggestions for the future! My dad lost his sense of smell and taste after a stroke 10 years ago, so I could use some ideas that work around that too.

One time, I used whole veggie sausages wrapped in puff pastry. They turned out great. I also added some Branston pickle inside for a little extra flavor. Another time, I used a mix of ground-up mushrooms, onions, chestnuts, breadcrumbs, seasoning, and cheese. That was really good too.

That’s a great idea, thanks! I love experimenting with vegetarian snacks for Christmas, but this December has been a bit crazy with my 1-year-old running around. My brain’s not working as it usually does! :sweat_smile:

No worries at all! You could try feta cheese—maybe add a sundried tomato to each mini roll if you have some. I totally agree, the last place I’d want to be with a 1-year-old on Christmas Eve is the supermarket! :sweat_smile:

There’s a great vegetarian sausage roll recipe by Delia Smith that uses cheese, onions, breadcrumbs, herbs, and a bit of cream to bind everything together. It’s really tasty. Maybe you could take some inspiration from it, even if you don’t have all the ingredients on hand.

Ooh, that sounds interesting! We’re big fans of cheese and onion pasties, but I never thought to make them a bit fancier. Thanks for the suggestion, I’ll add it to my list and decide what to do tonight when I bake.

We’ve been making these every year for Christmas for the past 30 years: mashed soybeans, rehydrated TVP (or Quorn mince), blitzed onions, grated carrot, mixed herbs, and soy sauce. Then wrap it all in puff pastry and top with sesame seeds. They’re super cheap and pretty nutritious.
