These are Greek butter beans in a tasty tomato and sundried tomato sauce. It’s super easy and packs in a lot of protein! Check out method and recipe if you want to see how I make it.
Ingredients:
• 500g Gigantes beans (boiled separately)
• 2 small onions, chopped
• 3 garlic cloves, minced
• 1 red bell pepper, diced
• 2 carrots, sliced
• 50g tomato paste
• 1 diced tomato
• A handful of sundried tomatoes, chopped
• 1 celery stick, chopped
• Plenty of fresh parsley, chopped
• 2 tsp cinnamon
• 1 tsp smoked paprika
• Salt and pepper to taste
My Extra Touch:
1 tsp of tarragon and 1 tsp of oregano
1 cup water for extra sauce
Instructions:
- Boil the Gigantes beans until they’re soft.
- Sauté all the veggies in some olive oil.
- Mix beans and veggies, then add cinnamon, smoked paprika, salt, and pepper.
- Bake at 180°C (350°F) for 30 minutes.
