Who wants to try Gigantes… anyone made this before?

These are Greek butter beans in a tasty tomato and sundried tomato sauce. It’s super easy and packs in a lot of protein! Check out method and recipe if you want to see how I make it.

Ingredients:
• 500g Gigantes beans (boiled separately)
• 2 small onions, chopped
• 3 garlic cloves, minced
• 1 red bell pepper, diced
• 2 carrots, sliced
• 50g tomato paste
• 1 diced tomato
• A handful of sundried tomatoes, chopped
• 1 celery stick, chopped
• Plenty of fresh parsley, chopped
• 2 tsp cinnamon
• 1 tsp smoked paprika
• Salt and pepper to taste

My Extra Touch:
1 tsp of tarragon and 1 tsp of oregano
1 cup water for extra sauce

Instructions:

  1. Boil the Gigantes beans until they’re soft.
  2. Sauté all the veggies in some olive oil.
  3. Mix beans and veggies, then add cinnamon, smoked paprika, salt, and pepper.
  4. Bake at 180°C (350°F) for 30 minutes.

Thanks so much for this! I had an amazing Gigantes dish in Chania, Crete, at a small vegan spot. The owner was an older gentleman, and he added a bit of orange flavor, maybe peel or juice. It was honestly the best dish I’ve ever had.

I’ll definitely give this a go and maybe try adding orange peel to see if it matches the flavor!
