What should I bring to a vegan-friendly Thanksgiving brunch?

I’m going to a Friendsgiving brunch next weekend. I’m the only vegan there, but everyone is cool with eating vegan or vegetarian food. Here’s what will already be there: bagels, fruit, and sweet potato hash. I usually like to bring two dishes or something filling to make sure I have enough to eat (plus, I’m 8 months pregnant, so I need my snacks!). I was thinking about making a mushroom tart, but maybe there’s something more brunchy? Any ideas?

Edited: ***dish not fish lol :sweat_smile:

What about a Just Egg broccoli cheddar quiche?

How about vegan Boursin cheese with crackers or crispbreads? It’s delicious, and we sometimes find a big tub of it at Costco.

Wait… Boursin makes a vegan version? :open_mouth: Are you in the U.S.? :pray:

@Bailey
I’m in Canada, but it’s tough to find. My Costco in BC gets a big container around Christmas, but my dad in Ottawa finds smaller ones year-round. Here’s a link to check it out: Boursin Dairy Free Cheese Spread Alternative | Boursin Cheese

P.S. It’s amazing melted into a pasta sauce for a creamy finish!

@Harlan
Thanks! Looks like it’s out of stock near me for now, but I’ll keep an eye out. Seems pricey, but I’m definitely intrigued. Didn’t even know this existed!

Costco had a big one—425g (15 oz)—for $12.99, and they put it on sale for $9.99. Total bargain if you can find it. I think they only stock it around Christmas. I’m planning to grab another one and freeze it in portions!

@Harlan
Wow, that’s a great deal! Here, it’s $7.49 USD for a 6 oz package. Definitely keeping an eye out!

Yeah, if you spot it at Costco, grab it! They really only carry it for a short time. Freezing it works great too.

@Bailey
It’s available in the U.S.! I’ve seen it at both Costco and grocery stores. My fiancé (not vegan) prefers it over the original. Definitely worth tracking down.

Thanks for the tip! Looks like Target might have it near me. Happy cake day! :birthday:

@Bailey
Thank you! I hope you get to try it soon :blush:

You could try spanakopita made with tofu feta.

That sounds great! You could even turn those flavors into a quiche.

Oh, I love this idea! Do you have a recipe you’d recommend?

@Lyric
Not off the top of my head, but I’ve had good ones made with tofu. A search for ‘vegan tofu spinach quiche’ should bring up some good recipes!

How about a breakfast Crescent roll ring? You can make it vegan by using Pillsbury Crescent rolls and swapping eggs for tofu scramble. Add vegan cheese, broccoli, mushrooms, or whatever you like.

This is a great idea. I think I’ll do this with mushrooms!

Thank you! This looks amazing, but the hosts are already making sweet potato hash. I’ll save this for another time though!
