My husband and I caught colds over Christmas, so we decided to delay our celebration until New Year’s Eve, hoping we’ll feel better by then. But knowing how our colds usually go, I don’t expect either of us to be at full strength. I want a nice dinner, but I’m not up for something complicated like mushroom Wellington. I’m looking for easy ideas, whether it’s a simple recipe or a meal kit/service I can order last minute. Carryout is an option, but the restaurants will be packed that day, so I’m not too thrilled about that.

I do the same thing! It thickens the soup and makes it even better!
If you enjoy mushrooms, how about a mushroom sauté over polenta? Or you could make a nice butter lettuce salad with green goddess dressing. If you have some energy earlier in the day, veggie lasagna is another easy option. Just layer lasagna noodles with pasta sauce, sautéed veggies (baby spinach works well), ricotta, and top it with parmesan.
We always do fondue for New Year’s! It’s simple and fun.
I love using ready-to-roll pastry when I’m too tired to cook but still want something special. You can spread pesto on the pastry, add chopped veggies (peppers, tomatoes, zucchini), and top with mozzarella. Fold the edges over a little and bake for about 30-40 minutes. Another idea is a roasted veg bake with cranberry or apple sauce, roasted carrots, parsnips, and some fresh onions and mushrooms. Try brown sugar and mustard glazed tofu. It’s my go-to holiday meal. The hardest part is pressing the tofu, but after that, it’s quick and easy to make.
