What do you eat day to day?

I am vegan curious, so I hope I’m allowed here, but how do you put together a meal from scratch? I saw someone talking about how they get more protein as a vegan then they did before, but I assume they’re eating a lot of prepackaged, processed vegan proteins. I’d prefer to cook with more basic ingredients like fresh, frozen, and canned fruits and vegetables, beans, rice, pasta, etc. Can you put together a complete meal on the fly without relying on pre-made protein?
