What can I use instead of mushrooms?

My brother is bringing his new girlfriend over for holiday dinner at my house. I was planning to make a lentil mushroom walnut wellington but I just found out she’s allergic to mushrooms. What do you think I can use instead of mushrooms? I’m thinking of using
vegan richa’s recipe

How about chestnuts?

Could eggplant work instead?

Cauliflower could be a good replacement.

Fake meats, tofu, tempeh, or even chopped up soy curls could work.

I was actually thinking of trying the Nora Cooks recipe (before you posted it, lol) and using smashed up soy curls instead of Impossible grounds. Would that be a good option for you?

I’ve made this the last couple of years. It’s really good and not too hard to make.
