What are you all cooking the week of Christmas but not on Christmas?

I’m a first-time mom and we’re hosting my parents and sister for Christmas this year so we don’t have to fly with the baby. I’m making a vegan Shepard’s pie for Christmas and some family favorites for sides. I also have plans for one other day with tamales from the farmer’s market, but I need easy dinner ideas for the other nights while they are here. What are you all making that’s simple and easy for the other days that week?

White Bean and Kale Soup – the heartier version of this soup (there are 2 versions) is a crowd favorite and super simple to make.

Pesto Baked Ziti is also easy and loved by many – especially easy if you have a Trader Joe’s nearby.

Maple Miso Glazed Tofu Roast This, plus mashed potatoes or scalloped potatoes with miso mushroom gravy and brussels! Maybe a side salad too.

Also, you’re a new mom. I hope your husband and/or parents are doing some of the cooking too!
