Did you use one or two loins? Yours looks bigger than just one. I’m making this for Christmas dinner on Saturday too. I think one might not be enough for my group, so I was wondering if I can bake both together in one puff pastry sheet or make two separate ones.

Juicy Marbles plant-based tenderloin comes in 1.75 lb loins. One might not feed 6 people, so I was wondering if OP used just one or two loins together, because in the picture, it looks larger than a single one.
I made the same thing last night! I’m the only vegan in my family, but everyone loved it—especially the 3 vegetarians I keep trying to convince to go vegan!

It’s actually the Gaz Oakley/Avant Garde vegan brisket recipe, brushed with Dijon mustard, wrapped in store-bought vegan puff pastry, and filled with finely diced and fried mushrooms. This looks amazing! One of the vegan spots here in Denver had a beef wellington for Thanksgiving that was so tempting, but it was too expensive. You’ve inspired me to try making it myself!
