Looking for Vegan Thanksgiving Dish Ideas... Anyone Got Suggestions?

Hey everyone, I’m planning to bring a dish to my family’s Thanksgiving. I know there will be vegan stuffing, and the usual non-vegan stuff, but I want to bring something everyone can enjoy. I’m not really into making a big vegan roast or seitan this time… Any ideas? So far, I’m thinking about stuffed acorn squashes.

I’m planning to make vegan shepherd’s pie for Thanksgiving this year. I think it’s a great dish for the holiday.

I’m making pumpkin tofu ricotta stuffed shells with creamy sage sauce this year. I made it last year and it was a big hit, even with the non-vegans.

Oh wow, I need to try this! How much pumpkin do you use?

I think I used about one cup of canned pumpkin puree and one block of tofu. I don’t remember exactly, though, since I tend to improvise. Here’s the recipe I loosely followed: [link to recipe]

I’ve had a lentil and mushroom stew over mashed potatoes for Thanksgiving before, and it was delicious! You could also try a lentil loaf.

I love the look of the roasted Brussels sprouts on the stalk from Trader Joe’s. They make a great addition to the meal!

What about dessert? Pie? Or for sides, you could go with mac n cheese, green bean casserole, mashed potatoes, candied sweet potatoes, Texas toast garlic bread, roasted veggies, chips, and dip. The stuffed acorn squash sounds great, but I’m not sure how well it would travel in a car, just my thoughts.
