I’m not a Vegan myself, but one of my close friends is. She’s the only vegan in our group, but when I cook for everyone, I make sure to either prepare something special for her or make the whole meal vegan-friendly.
In a few days, we’re having a get-together, and I usually make burgers with a Vegan burger option for her, or sometimes I make vegan spaghetti. I also pick up some Vegan snacks for when she visits on non-gathering days, but I’m always looking for new ideas. I know she doesn’t mind if I cook something different for her, but I try to make everyone feel included.
So, I’m wondering if anyone has any simple, tasty, Vegan recipes that can feed a large group of around 15 people? I’d love to hear your go-to dishes, and if you have a recipe, even better!

How about curry? You could make a big pot and cook the proteins separately, then split it into two dishes—one with vegan protein and one with animal protein.
Here’s a recipe I love: Bon Appetit’s Chicken Tikka Masala but I swap the cream and yogurt for vegan versions, and instead of marinating the tofu or seitan, I just throw it straight into the sauce. I made this for my family recently with baked tofu, and they loved it!
Myheartbeets.com has great recipes. I replace chicken with potato (the chicken bhuna is amazing!), and adjust the instapot time to 2 min on high with a 10 min natural release (for chicken it’s 5 min). You can also use soy curls instead of chicken. I did that last night in a saag dish, just threw a handful in with some water.
Pasta, like cheaplazyvegan’s lasagna, is always a hit. You could also make casseroles, enchiladas, tacos, burrito bars, or Thai noodles and curry. Those all come to mind!
Here’s a simple recipe I found on Google: Vegetable Lasagna. You can choose vegetables everyone likes and just layer them with sauce. I like mushrooms, sundried tomatoes, spinach, and squash. Instead of vegan cheese, I use thinly sliced tomatoes to make it look nice.
For ricotta, I make tofu ricotta. It’s packed with protein and holds everything together. Here’s the recipe for that: Tofu Ricotta.
I use Jiffy cornbread mix (make sure it’s the vegetarian kind and use flax and almond milk!). For 15 people, I’d double or triple it. I also love chickpea curry, it’s a safe bet!
Another idea: make a baked potato bar! You could serve chili with baked potatoes and a variety of toppings.
Ottolenghi’s tandoori chickpeas are great and can be scaled up. You could serve them with whole grain pita or brown rice. If you want to add some meat, grill some chicken kabobs for the non-vegans, but the vegan dish will be amazing on its own.
