I've figured out how to make super easy and quick veggie stock... anyone else tried this?

Let’s be real, not everyone has their life together enough to save all those veggie scraps. So here’s a quick and easy way to make veggie stock: heat water, add your favorite better than bouillon (I went with the plain veggie one since it was the only one at Safeway), use a little more than what the instructions suggest. Toss in some salt, then add a bit of vegan Worcestershire sauce to taste. Finish it off with your preferred thickener (cornstarch, potato flakes, or I like to use arrowroot powder).

For a bonus, if you’ve got a dried mushroom hanging around, toss that in for a minute or two, then take it out. I like to use shiitake mushrooms.

My family, who are all meat eaters, couldn’t stop talking about the stock when I made it for Christmas cabbage rolls! They were like ‘These cabbage rolls are great, but what’s in this stock?!’

Keep a bottle of vegan mushroom ‘oyster’ sauce for when you can’t be bothered messing with shiitake.

Send the cabbage roll recipe! I’m curious!

I’ll post it here tomorrow! I kind of pieced it together from like five different recipes, haha!

I’ve been meaning to try that stock method! I bet it’s so flavorful!

Miso is a great addition too!

Ok, hear me out… I think saving scraps is the even lazier way to do it! I just toss all my veggie scraps in a big gallon bag in the freezer and forget about it. Then, one day, I realize it’s full and dump it all in the instant pot on the broth setting. A couple hours later, I’ve got lazy girl stock. The active cooking time is only about 1 minute, just filling the instant pot with water, haha. But now I’m thinking of taking this stock and zhuzhing it up with your method for ULTIMATE VEGGIE STOCK (monster truck voice)

I make some poultry broth at home. Every time I use it in a recipe, I add a little bit of better than bouillon instead of salt. I’ll try adding your mushroom trick next time!
