If you love comfort food with a twist, you have to try this recipe from Ottolenghi’s cookbook ‘Comfort’. It’s a warm and filling dish that combines spaghetti, miso, wild mushrooms, and spinach. Perfect for chilly autumn evenings.

Ingredients

  • 190g/7oz dried spaghetti or linguine
  • 150g/5oz mixed wild mushrooms (shiitake, oyster, chanterelle)
  • 150g/5oz baby spinach
  • 1 banana shallot, finely chopped
  • 3/4 cloves garlic, minced
  • 2 tablespoons olive oil (optional)
  • 50g/1 tbsp white miso paste
  • 1 tbsp wild mushroom glace
  • 1 tbsp malt or Chinese black rice vinegar
  • 1 tbsp light soy sauce
  • Seasoning

Garnish

  • Shichimi togarashi or chili flakes

Method

  1. Cook the pasta: Boil salted water and cook the spaghetti until al dente.
  2. Chop the shallots, garlic, and mushrooms.
  3. Heat olive oil in a skillet over medium-high heat. Cook mushrooms, shallots, and garlic until golden brown.
  4. Add mushroom glace, miso paste, vinegar, and soy sauce. Simmer for 5 minutes until thickened.
  5. Stir in spinach and cook until wilted. Toss in the cooked spaghetti.
  6. If the sauce is too thick, add reserved pasta water.
  7. Season and serve with garnish.

Just found out there’s something called a ‘banana shallot.’ We just call them shallots but I get it, being specific isn’t bad. Looks like a great recipe, I’ll give it a try. Thanks for sharing.
