Instant Pot vegetarian recipes… what’s beyond soups?

I’ve been using my Instant Pot mostly for bean and veggie soups. Do you have any favorite recipes you make in yours that aren’t soups? Share your ideas with me!

I use mine to batch cook basics like steamed potatoes, beets, and beans. Then I use them in meals like Buddha bowls, beet salads with walnuts and fennel, or bean salads and burrito bowls. It’s super versatile!

I like to make a quick dish with quinoa, beans, corn, just enough veggie stock to cook the quinoa, and some spices. Also, I make this recipe but swap the chicken for beans or tofu. I adjust with extra fat and salt since I’m skipping the chicken. Adding jalapeños, cilantro, corn, or taco spices makes it even better!

I mostly use mine to steam seitan. It’s perfect for that!

Japanese curry is a favorite. I throw in potatoes, onions, carrots, green beans, some water, and Japanese curry cubes. After it’s done cooking, I add tofu. I also use the Instant Pot as a rice cooker a lot!

I make Japanese curry on the stove pretty often since it doesn’t take long. Do you save time with the Instant Pot? I don’t use mine much because it feels like a hassle for veggie dishes.

It’s not a big time-saver for this recipe. I just like that you can set it and walk away without worrying about it.

This recipe is one of my favorites: Cheesy Southwestern Lentils and Rice. Just throw everything in and let the Instant Pot do its thing. It’s great with taco chips and freezes well!

Peas and Crayons has a great lentil tortilla soup recipe. It includes instructions for Instant Pot, slow cooker, and stovetop versions.

Indian recipes are a goldmine for Instant Pot cooking. Swasthi’s blog has a whole section for Instant Pot recipes. Also, Amy and Jacky’s site is great for tested recipes: Instant Pot Vegetarian Recipes. Their guide on hard-boiled eggs is super handy!

Yes! Hard-boiled eggs in the Instant Pot are amazing. The shells peel off so easily.
