Hey! I’m visiting family and ended up with two almost full cartons of unsweetened almond milk. I’m the only one who drinks it, but since I’m leaving in a couple of days, I need to find ways to use it up before I go. Things like desserts usually work, but the only substitute I have is vegan butter. Any ideas? My family loves southern food, so think things like ambrosia, pies, maybe cookies. I’d really appreciate any help!

Acidifying milk is pretty normal though, right? You let it curdle and then use it for biscuits. Unless you’re in the UK and call them scones, but those aren’t quite the same. We do this in the Southern US for biscuits and sausage gravy all the time. It’s common where I’m from.

Oh no, I know. I just think my southern grandparents would haunt me for veganizing a biscuit! I do butter and soy milk for other recipes, but we don’t do sausage gravy with biscuits around here. I think that’s more regional within the South.

My southern fiancé loves veganizing biscuits and gravy for me. He’s not vegan but thinks everyone should enjoy biscuits and gravy, haha!
How about making pudding? It would need a lot of almond milk. Maybe a chocolate pudding to cover up the almond milk flavor? Here’s a recipe: Best Vegan Chocolate Pudding. I’ve made similar ones and they work well.

You could steep chai spices in it and make a nog-like drink. You can also blend with cacao powder and tofu or avocados to make a chocolate mousse.

I think almond milk is too thin for ice cream. It might get icy.
How about making a chocolate pudding pie with a graham cracker crust? It’s really simple and needs about 4 cups of milk.
You could make hot chocolate milk for the whole family!
