No problem! Here it is:
- 8 oz tomato paste
- 1 packet taco seasoning (I like El Paso hot and spicy)
- 1 can corn
- 1 can red beans
- 1 package meat substitute (I use Trader Joe’s brand)
Mix the tomato paste, half the seasoning, corn, red beans (with bean liquid) in the crockpot. Add 1 can of water using the empty bean can. Stir well to break up the paste.
15 mins before serving, brown the meat substitute with the rest of the seasoning, then add to the crockpot and mix.
Serve with cornbread or tortilla chips. I sometimes add sour cream, cheese, or fried jalapeños if I want to dress it up. It’s easy, warm, and filling.
