I need a bit of help! I’m trying to find a vegan cream cheese recipe that fits these:
Nut and gluten-free
No tofu
Easy to make with basic ingredients
I want to make a cheesecake for Christmas that’s gluten-free, vegan, nut-free, and maybe soy-free due to allergies. But cream cheese here is super expensive—$7 for a tiny tub! That’s too much before even adding the other ingredients.
If this turns out to be too tricky, I might just bake a regular cake instead. But I’ve been craving cheesecake for ages and really miss making it. Any ideas? Thanks so much!

It doesn’t have to be cheesecake, but I’d really love to make one if I can. I found some ideas that might work, so I’ll make smaller batches to test them first!
If you’re into vegan baking, you might already have the ingredients. For the crust, you could try using gluten-free cookies if you don’t want to make one from scratch. You could also switch up the fruit toppings.
Maybe try using coconut cream as a base? You could thicken it up with other ingredients. It won’t be like a New York-style cheesecake, but it could work as a no-bake version.

I actually found a baked recipe that uses coconut! It’s good to know this might work. I’ll give it a shot, thanks!
