Ingredients:
• 400g firm tofu, cut into cubes
• 2 tbsp vegetable oil
• 1 large onion, sliced
• 3 cloves garlic, minced
• 1 tbsp grated ginger
• 3 tbsp green curry paste
• 1 tsp ground coriander
• 400ml canned coconut milk
• 200ml vegetable stock
• 1 tbsp soy sauce
• 1 tbsp maple syrup
• 1 red bell pepper, sliced
• 150g sugar snap peas
• 3-4 green chillies (optional, for extra heat)
• Juice of 1 lime
• Salt and freshly ground black pepper
• 300g jasmine rice, cooked according to package instructions
Method:
Press the tofu by placing it on a towel and weighing it down for about 15 minutes, then cut it into cubes.
In a frying pan, heat 1 tbsp oil over medium heat and fry the tofu cubes until golden on all sides. Set aside.
Heat the remaining oil in a large saucepan over medium heat, add onion, and sauté until soft. Add garlic and ginger, cooking for a minute until fragrant.
Stir in green curry paste and coriander, cooking for another minute.
Pour in coconut milk and stock, add soy sauce and maple syrup, and let simmer for 5 minutes.
Add bell pepper, snap peas, and green chilies; cook until veggies are tender.
Add fried tofu, stir in lime juice, and season with salt and pepper.
Serve over jasmine rice with extra lime wedges if you like.
