Anyone here tried making Vegan Thai Green Curry? Let's chat about it

Hey everyone! Here’s a full recipe I came across. Check it out if you’re into vegan Thai dishes.

Ingredients:

• 400g firm tofu, cut into cubes
• 2 tbsp vegetable oil
• 1 large onion, sliced
• 3 cloves garlic, minced
• 1 tbsp grated ginger
• 3 tbsp green curry paste
• 1 tsp ground coriander
• 400ml canned coconut milk
• 200ml vegetable stock
• 1 tbsp soy sauce
• 1 tbsp maple syrup
• 1 red bell pepper, sliced
• 150g sugar snap peas
• 3-4 green chillies (optional, for extra heat)
• Juice of 1 lime
• Salt and freshly ground black pepper
• 300g jasmine rice, cooked according to package instructions

Method:

  1. Press the tofu by placing it on a towel and weighing it down for about 15 minutes, then cut it into cubes.
  2. In a frying pan, heat 1 tbsp oil over medium heat and fry the tofu cubes until golden on all sides. Set aside.
  3. Heat the remaining oil in a large saucepan over medium heat, add onion, and sauté until soft. Add garlic and ginger, cooking for a minute until fragrant.
  4. Stir in green curry paste and coriander, cooking for another minute.
  5. Pour in coconut milk and stock, add soy sauce and maple syrup, and let simmer for 5 minutes.
  6. Add bell pepper, snap peas, and green chilies; cook until veggies are tender.
  7. Add fried tofu, stir in lime juice, and season with salt and pepper.
  8. Serve over jasmine rice with extra lime wedges if you like.

True that, most curry pastes, especially from Thailand, contain shrimp paste.

I had my heart set on curry for dinner, but couldn’t make it. This looks like something I’d try!
