Hi everyone… I’m not vegan, but I’m trying to be supportive of a family member’s choice this year. I need help with vegan cookie recipes, please share if you’ve got some favorites?
Usually, I bake a big batch of cookies with the kids during the holidays. We make enough so everyone can enjoy them while decorating, bring some home, and have a batch for Christmas Eve. It also gives parents a little break, so they can do some holiday shopping or just relax.
One of the older kids (16) decided to go vegan recently. No one minds, but it’s new for us! I don’t want them to feel left out, but I’m a bit stuck since all my go-to Christmas cookie recipes use butter and eggs.
I’ve looked up some vegan recipes online, but I’d really love any tried-and-true ones that you all have experience with! These are what I usually make:
Gingerbread cookies with royal icing
Vanilla, chocolate, or coffee shortbread with either melted chocolate or royal icing

I’ve made a bunch from the book ‘Vegan Cookies Invade Your Cookie Jar.’ It’s got a good range, so you could make all your favorites vegan.
Another way is to search ‘vegan’ plus the type of cookie you’re looking for. You’ll usually see reviews to help you know which ones are worth trying. Snickerdoodles are my personal favorite!
For cookies, you can usually just swap out the ingredients.
Use plant-based butter instead of regular butter… there are plenty of options now. For eggs, mix a teaspoon of ground flax or chia with water for each egg needed.
If you’re open to a bit more effort, these gingerbread cookies are really tasty! I made them last year… but I’m German, so I might be biased toward Lebkuchen:
I make these a lot… they’re simple and turn out great every time! I don’t shape them as described though… I just flatten them a bit. Maybe try dipping them halfway in chocolate for decoration?
